Creamy Tomato Basil Tortellini Soup Recipe

Ingredients:

  • 1 tbsp olive oil
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream or half-and-half
  • 1 package (9 oz) refrigerated cheese tortellini
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh basil
  • Optional: grated Parmesan, pesto drizzle

Instructions:

  1. Sauté the Base:
    In a large pot, heat olive oil over medium. Add onion and garlic, cook until soft and fragrant, about 3 minutes.
  2. Add Tomatoes and Broth:
    Stir in crushed tomatoes and broth. Bring to a gentle simmer for 10 minutes.
  3. Add Tortellini and Cream:
    Stir in tortellini and cook until tender, about 5 minutes. Add cream and simmer for another 2–3 minutes. Season with salt and pepper.
  4. Finish and Serve:
    Stir in basil just before serving. Ladle into bowls and top with Parmesan or pesto if desired.
