Ingredients

  • 3 ripe avocados
  • 1 lime, juiced
  • 1/2 tsp kosher salt plus more to taste
  • 1/2 small white onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1 small handful fresh cilantro, roughly chopped
  • 1 Roma tomato, seeded and diced

Instructions

  • Cut avocados in half, remove the pits, and scoop the flesh into a bowl.
  • Add the lime juice and salt immediately. Mash with a fork to your preferred texture — somewhere between smooth and chunky works well.
  • Add the onion, jalapeño, cilantro, and tomato. Fold together gently to maintain some texture.
  • Taste and adjust salt and lime as needed. Let sit for 5 minutes before serving.
  • Serve with tortilla chips.

Notes

Ripe avocados are essential — they should yield to gentle pressure. Press plastic wrap directly onto the surface of any leftovers to slow browning. Best eaten fresh but will keep in the fridge for 1 day.
