Ingredients

Salad

  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup kalamata olives halved
  • 1/2 cup crumbled feta cheese
  • fresh parsley chopped

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove minced
  • 1 tsp dried oregano
  • salt and pepper

Instructions

  • Whisk dressing ingredients together.
  • Combine all salad ingredients in a large bowl.
  • Pour dressing over and toss gently. Let sit in the fridge for an hour before eating if you can — the flavors soak into the chickpeas.
