Turkey Pesto Panini

A grilled pressed sandwich with deli turkey, basil pesto, and melted fresh mozzarella on ciabatta bread.

Ingredients

  • ciabatta or sourdough bread sliced
  • 4-6 oz sliced deli turkey
  • 2-3 tbsp basil pesto
  • fresh mozzarella sliced
  • baby spinach a few leaves
  • sun-dried tomatoes optional
  • butter or olive oil for the outside of the bread

Instructions

  • Spread pesto on the inside of both bread slices. Layer turkey, mozzarella, spinach, and sun-dried tomatoes.
  • Butter the outside of the bread or brush with olive oil.
  • Cook in a panini press or skillet with a heavy pot on top for 3 to 4 minutes per side until golden and cheese is melted.
  • Slice on a diagonal and eat while hot.

Notes

No panini press? A regular skillet and a heavy cast iron pan on top do the same job.
